This region is composed of hardworking muscles that develop deep, robust beef flavor and excellent nutrient density. With the added influence of Wagyu genetics, this roast carries more natural marbling than traditional shoulder cuts, offering enhanced tenderness while staying true to the clean, lean profile of grassfed, grass-finished beef. Cooking Tips
1. Fire up the grill and sear the roast on high heat for a few minutes on each side before finishing it off on indirect heat. This will give you a beautiful crust on the outside while keeping the inside moist and tender.
