Our Lamb Shoulder Chops come from the upper shoulder of the lamb, where richly marbled meat and connective tissue create deep, savory flavor and satisfying tenderness when cooked slowly or seared to perfection. Raised on our ranch alongside our cattle, this flock of sheep is wholly grassfed and grass finished on our organic pastures, living outdoors with fresh forage, sunlight, and plenty of space to roam. This natural lifestyle produces chops that are robust, beautifully flavored, and exceptionally nutrient dense, true to the purity and integrity of pasture-raised lamb.
