Located along the inside of the spine, this muscle does very little work, resulting in a naturally soft, fine-grained texture and clean, mild taste. Raised on open pasture with access to natural forage, our goats produce meat that’s beautifully pure and nutrient dense. This is an elegant cut, perfect for quick, gentle cooking and simple, nourishing meals.
