This cut is beloved for slow cooking: as it gently roasts or braises, the fat and collagen melt into the meat, turning it tender, juicy, and deeply savory. 

This delicious cut of meat comes from our regenerative pasture-raised organic farm, where our pigs are raised in a stress-free and natural environment. Our pigs are raised humanely on open pasture, where they root, forage, and explore in the sunshine, developing clean, naturally sweet pork flavor that shines in every bite.

Cooking Tips
