As the least-worked muscle on the animal, this cut is naturally the most tender and one of the leanest pieces of pork available. Raised outdoors on open pasture, where our pigs root, forage, and roam freely, this tenderloin develops a clean, gently sweet flavor with exceptional tenderness.
